PRAGUE FOOD FESTIVAL THEME: CULINARY TRENDS 2018

Motto:
The whole world of gastronomy strives to define which cuisines and dishes will be "in"? Which spices will be fancied by famous chefs? What drinks will be drunk? How considerate will we be of our planet? From a variety of ideas we have selected the most interesting TOP 10 which we would like to present at this year's festival.
 
 

1. DO YOU KNOW WHAT YOU ARE EATING? / EXPERIMENTING / MOLECULAR CUISINE

We play, discover and experiment. We enjoy new tastes, smells and shapes. Molecular cuisine is still "in".
Stands: All tastings in the area marked with the slogan: " Do you know what are you eating? (you don’t :-) "
  
 

2. ALL SENSES

Let's involve not only taste but also sight, smell, touch and hearing. Let's try how important our senses are in gastronomy and what happens when we lose one.

Thanks to globalization various world cuisines are being connected. Through gastronomy we discover new cultures – we are "gastronauts".

We take care of our body and soul. We discover so called superfood which is notable for its high concentration of nutrients, fibre, vitamins and minerals and in its own way extends our life span.

5. HERBS / FLOWERS / PLANT-BASED DIET

Wild herbs and flowers appear on menus of the best chefs but also on our tables at home. We grow them and we learn. Plant alternatives are fashionable now because of health and taste.

6. CURRICULUM VITAE / LOCATION

We are interested in the Curriculum Vitae of the food. We read labels, we want to know exactly what a product consists of, how it was grown or bred, what processes it went through and where it comes from.

7. TRADITION / FIRST REPUBLIC

We return to traditional recipes and the way of life of our grandmothers. We use "forgotten" ingredients. We celebrate 100 years since the establishment of the republic.

8. TASTE WASTE / RESPECT FOR THE PLANET

Wasting food, water and ingredients is a global problem. We learn new recipes from seemingly unusable ingredients, we recycle, we buy "without packaging" and we think of the environment.
The philosophy of the festival and all its visitors. Recyclable cutlery, considerate treatment of water, ingredients and waste.
 
 

9. TO SHARE / FAMILY TABLE

Dining is both a cultural and social event. We order dishes together, we share, mutually taste our food so that we can talk about it. Food brings us closer.

We are creative in selecting drinks. We try new alcoholic and non-alcoholic combinations. We enjoy lemonades from fresh fruit, beer specials, ice coffee, wine with a story, home-made smoothies from superfood, herb cocktails, we choose water as well.
